Matcha pudding is a simple yet elegant dessert that combines a silky, creamy texture with the distinctive earthy flavor of Japanese green tea. This easy recipe makes two individual servings and is perfect for anyone who enjoys delicate desserts with a unique flavor.

The pudding is made by combining sifted matcha powder and sugar with milk and heavy cream. Gelatin helps the mixture set into a smooth, delicate pudding that practically melts in your mouth. Once chilled, each serving is finished with a vibrant green matcha syrup made from matcha powder, sugar, and hot water.

This matcha pudding is a beautiful make-ahead dessert for dinner parties, special occasions, or whenever you’re craving a creamy Japanese-inspired treat.

Ingredients

Directions

Step 1

Add the gelatin and cold water to a small bowl. Stir to combine and leave it to bloom according to the package instructions.

Step 2

In a saucepan, combine the sifted matcha powder and 30 g of sugar. Mix well to help distribute the matcha evenly and prevent lumps.

Step 3

Add the milk and heavy cream to the saucepan. Heat over low to medium heat, stirring until the sugar dissolves. Do not let the mixture boil.

Step 4

Remove the saucepan from the heat. While the mixture is still hot, add the bloomed gelatin and stir until completely dissolved. Pour the mixture evenly into two serving glasses. Let it cool slightly, then refrigerate for at least 2–3 hours, or until the pudding is fully set.

Step 5

In a small bowl, combine the sifted matcha powder and 20 g of sugar. Add the hot water and whisk until smooth and evenly combined.

Step 6

Once the pudding has set, gently spoon the matcha topping over each serving. Return the glasses to the refrigerator until chilled.

Step 7

Serve the matcha pudding cold, straight from the glasses. Enjoy!
