Sweet Bundevara is one of those traditional Bosnian dishes that brings the warmth of home to mind. This sweet version is its most delicate variation. Thin, hand-stretched pastry filled with grated pumpkin and brown sugar, finished with a beautifully golden crust, makes this a dessert you won’t forget.
First, a soft dough is prepared using flour, salt, and warm water, then divided into two portions. The dough balls are brushed with oil and left to rest for one to two hours. This allows the dough to become elastic and easy to stretch into thin pastry sheets without tearing.
Next comes the filling. Grated pumpkin is combined with brown sugar and breadcrumbs to create a sweet, fragrant mixture that caramelizes beautifully during baking. The breadcrumbs absorb excess moisture from the pumpkin, helping the pastry stay crisp rather than soggy. The filling is spread evenly over the stretched pastry, which is then rolled up and arranged in a spiral in a baking dish. The same process is repeated with the second pastry sheet.
After approximately 35 minutes in the oven, your kitchen will be filled with the wonderful aroma of pumpkin and caramel. Before serving, dust with a little powdered sugar, if desired. Enjoy!
